Determination of bioactive compounds obtained by the green extraction of taioba leaves (Xanthosoma taioba) on hydrothermal processing

The objective of this study was to obtain and characterize a freeze-dried powder taioba leaves (Xanthosoma taioba) as source bioactive substances potential food applications. fresh were cooked lyophilized for further analysis. Its contents expressed in flavonoids, ascorbic acid total polyphenols quantified. Total antioxidant activity (TAA) determined by ABTS assays. chemical composition via infrared spectroscopy (FTIR) its microstructure visualized scanning electron microscopy (SEM). 17.15 mg/100 g, 58.3 g 24.15 mg Eq. gallic acid/100 respectively. A high content TAA found. 37.35 (µg TE/g). FTIR spectrum revealed high-intensity bands at 3350 cm-1, 2928 1637 1055 cm-1 related vibrations associated with typical −OH groups present cellulose membranes, hemicellulose, carbohydrates, lignin water. micrographs showed irregular structures the ground fibrous structure. These results indicate raw material formulations bioactives suitable applications various industrial segments.
